Bacon and Mushroom Egg Muffins

Breakfast is the most important meal of the day and today I want to share with you my breakfast muffins.

4 carrots • 1 medium onion • 400g leeks • 400g potatoes • Olive oil • milk • butter • sea salt • parsley • freshly ground black pepper • paprika and goat cheese for serving (2)

The above ingredients are for 12 muffins.


First, we need to preheat the oven to 180C.
I slice the mushrooms, spring onion and bacon.

No, we need to fry the bacon, mushrooms, and onion together in the butter on medium heat, until the mushrooms have softened.
While we are frying the some of the ingredients we have to mix together the pizza cheese, yogurt, and eggs very well.
When the fried mixture is ready we need to add it into the muffin tins with a spoon. After that, I pour the mix of egg, cheese, and yogurt, covering the filling.


I bake them for 20-25 minutes until the muffins become golden brown.
Once the breakfast muffins are cooked I remove them from the oven to let cool.
