Nectarine Cake

Craving for something sweet and baked in-house as I do lately? Don’t worry cause I have the solution :-).

Today I want to share with you one of my favorite cake recipes, as I usually not a fan of sweet things. This one is made with nectarines, but you can also use strawberries, apricots, blueberries, raspberries, peaches or any other fruit you like more.

We mix the eggs with the sugar and the vanilla sugar until the sugar starts to melt a little bit. Next step is incorporating a little bit of baking powder in the flour and then gradually add flour and the oil on the composition.

The fruits being heavy we need to make them stay on the surface of the cake we sprinkle some breadcrumbs on the nectarines.

I use baking paper for the tray and after that, I add the composition on it and I don’t have to add extra oil or butter for the tray. When the composition is ready in place I add the nectarines.


Don’t forget to preheat the oven for around 10 minutes at 180-200 degrees, depending on your oven. After this introduce the cake for about 30-35 minutes.


When the cake is ready you can sprinkle on top some icing sugar and this is it! If you like it warm you can add on your plate also some ice cream.
