Romanian Sour Meatball Soup (Ciorba de perisoare)

Today I want to share with you this delicious sour soup called Romanian Sour Meatball Soup (Ciorba de perisoare). The sour soups are very popular in Romania and they are made sour by adding either lemon juice, “bors” which is fermented wheat bran, sauerkraut juice, or sometimes even vinegar.  Most of the time I just use lemon juice and this gives the soup a very nice sour taste. Sometimes I use the powder “bors” that my mom sends it to me.



500g of minced beef and pork

1 egg

¼ cup of long grain rice

Salt and pepper to taste


1 onion chopped

4 carrots cut in small pieces

2 parsnips cut in small pieces

2 stalks of celery cut in small pieces

2 tbsp of tomato paste or 1 cup of tomato juice

Bors or juice of one lemon

Salt and pepper to taste

Parsley for garnish and a little bit of chopped spring onion

I first start by preparing all the vegetables and also half boil the rice.

The next step is to add to boil in a 4l saucepan water, carrots, parsnips, celery and I also season them with salt until they softens.

In the meantime, after the rice is half boiled and cooled, I prepare the meatballs. Mix all the ingredients for the meatballs and start forming small depends on how much patience you have. The smaller they are the cuter they look.

FullSizeRender_5When the vegetables are half boiled I add the meatballs and the tomato paste, add more salt by taste. I boil and simmer them for another 15 minutes and I try one to see if the meatballs are cooked. The final step is to add the bors or the lemon juice and leave to simmer for another 2-3 minutes.
